The consortium pledges to identify and transmit practices and means which make the relationship between quality and price of extra virgin olive oil more transparent and objective. In this way the relationship between the product’s commercial value and the level of quality is clearly explained and justified by the producer to the consumer.

With the help of a reliable, competent scientific committee the consortium is developing production and transformation rules that can be adapted to different production contexts and environmental conditions. This is to assist the producer in obtaining a high quality extra virgin olive oil.

In 2005 the consortium published “Guidelines for Quality”, a collection of best practices from production to storage and distribution for high quality extra virgin olive oil.

Thanks to the know-how acquired, the consortium has recently produced a document on behalf of the National Oil Producing Unions containing procedural guidelines for the integrated production of Italian high quality extra virgin olive oils, extending the good practices to the olive cultivation stages in the field.
